CODFISH PIE

 

Ingredients

codfish

eggs

cream

2 garlic cloves

2or 3 onions

shortcrust pastry

salt and pepper 

 

Procedure

- preheat the oven to 200 ºC

-smash the garlic cloves and chop the onions 

-cook and stir the garlic and the onions with some olive oil and season with a pinch of salt and pepper

- add the codfish and let it cook slowly

- season the codfish mixture with a pinch of salt and pepper and stir

- whisk eggs and cream in a bowl and season with a pinch of salt and pepper

- prepare the shortcrust pastry in a pie plate 

- spread the codfish mixture

- pour the eggs mixture over the codfish 

- bake in the preheated oven for about 30 minute

COTTAGE CHEESE RUSK

 

Ingredients

cottage cheese

courgette

wheat bread (sliced)

garlic cloves

a handful of fresh coriander

olive oil

salt and pepper

 

Procedure:

-chop the courgette and cook it with a bit of olive oil and garlic cloves

- season with a pinch of salt

-mix the cottage cheese and the coriander in a large bowl

-meanwhile toast the bread slices

-spread the cheese and coriander mixture over the bread slices and pour the cooked courgette all over each slice

TUNA SALAD

 

Ingredientes

lettuce (mix of different kinds)

tomatoes

canned tuna

bread slices

olive oil

garlic cloves

 

Procedure:

- Mix the different kinds of lettuce, the tomatoes and the tuna in a large bowl

- pour some olive oil over the bread slices

- spread the garlic on the bread

- cut the bread slices in small pieces and add them to the salad

STUFFED COURGETTE ROLLS

 

Ingredientes

about 3 courgettes

cream

cottage cheese

1 or 2 garlic cloves

olive oil

a handful of fresh coriander (chopped)

 

Procedure

- mix the cottage cheese, the cream and the coriander in a large bowl 

- slice the courgettes lengthways, drizzle some olive oil and grill the in the oven (180 ºC) with the  garlic cloves

(lay the courgette strips flat, trying not to overlap)

- Place the cheese mixture onto each strip of the grilled courgette and roll up

-Repeat until you have used all the filling 

-Place the rolls in a plate and serve

TUNA TOAST

 

Ingredients:

wheat bread

onions

cherry tomatoes

canned tuna

olive oil

lettuce

salt and pepper

 

Procedure

- cut the onions in thin round slices and cook them with a bit of olive oil

- stir gently and then season with salt and pepper

- prepare the slices of bread and toast them for some minutes

- spread the canned tuna over the slices of toasted bread and then the cooked onion over the tuna

- decorate with the cherry tomato and some lettuce on top
